salada de feijão frade // black eyed peas salad

tenho andado ausente do blogue. mais ou menos activo pelo instragram. e bastante mais activo no yelp (tão viciante!). porque entre trabalho e organizar jantares e "festas" cá em casa, não sobra muito tempo. contudo, há sempre lugar a novas ideias. a algo simples. como esta salada de estilo americano! não é a típica cobb salad, mas sim uma versão mais leve. onde o ingrediente principal é o feijão frade e o acompanhamento um coleslaw de funcho.

I have been away from blogging. more or less active on instagram. and much more active on yelp (so addicting!). because between work and organizing dinners and "feasts" at home, there is not much time free. however, there is always a place for new ideas. for something simple. like this american style salad! it's not the typical cobb salad, but a lighter version. where the main ingredient is the black eyed peas and on the side a fennel coleslaw.

para 2/3

ingredientes:

400 gr de feijão frade, cozido
3 tomates
1/2 pepino
2 ovos cozidos
1 abacate
1 bolbo de funcho
um punhado de salsa
1 limão, sumo
2 c. sopa de azeite 

Na noite anterior levar acabo o primeiro passo, preparar o feijão-frade. Deixar em água cerca de 12 horas. No dia seguinte, levar a cozer em água abundante e com uma pitada de sal. Deixar levantar fervura e depois deixar a cozer em lume brando por cerca de 1 hora. 
Enquanto isso preparar o resto dos ingredientes. Cortar os tomates à metade e depois às meias rodelas. O mesmo para o pepino, cortado em metade e depois em meias rodelas. Quando os ovos estiverem cozidos, cortar também às rodelas. Descascar o abacate, retirar o caroço e cortar em fatias finas.
Por fim preparar o coleslaw. Cortar o bolbo de funcho em tiras finas e picar bem a salsa. Misturar tudo numa taça, juntar o sumo do limão, o azeite e temperar com sal e pimenta.

Servir a salada em estilo Cobb salad, com o ovo, pepeino, feijão frade, tomate e abacate lado a lado numa tábua de servir com um molho de vinagrete e o coleslaw.

serves 2/3

ingredients:

400 gr black eyed peas, boiled
3 tomatoes,
1/2 cucumber,
2 boiled eggs
1 avocado
1 fennel bulb
a bunch parsley
1 lemon, juice
2 tbsp. olive oil

On the night before prepare the black eyed peas. Leave in water for about 12 hours. So on the next day, cook in a sauce pan with plentiful of water and pinch of salt. Let it boil and then simmering in low heat for about 1 hour.
In the meantime prepare the other ingredients. Cut the tomatoes in half and slice them. The same for the cucumber, cut in half and then in slices. When the eggs are boiled, slice them. Peel and pit the avocado and cut into thin slices.
Now prepare the coleslaw. Cut the fennel bulb in thin strips and chop the parsley. Bring together in a bowl, add the lemon juice, olive oil and season with salt and pepper.

Serve the salad in a Cobb salad style, with egg, cucumber, black eyed peas, tomato and avocado side by side on a serving board with some vinaigrette and coleslaw.
